GF Buckwheat Soda Bread

  I made a mistake earlier (12/30/15) and purchased a few recipes online (at 5AM not thinking or reading clearly), I couldn't return them (before I downloaded them) so I am sharing the recipes with you all for free! I hope you can enjoy them.

KUKU PAKA (Kenyan chicken in coconut curry sauce)

It is a perfect illustration of how African, Arab and Indian influences meld in the coastal region. 4 to 6 servings INGREDIENTS Chicken, cut into pieces -- 3 pounds Onion, chopped -- 1 Hot chile peppers, chopped -- 2 or 3 Ginger, peeled and chopped -- 2 tablespoons Garlic, chopped -- 2 tablespoons Oil or ghee -- 1/4 cup (olive oil) Curry powder -- 1 tablespoon Cumin seeds -- 2 teaspoons Chopped tomatoes or tomato sauce -- 2 cups Coconut milk -- 2 cups, or 1 (15-ounce) can Salt and pepper -- to taste Cilantro, chopped -- 1/2 cup METHOD Add the onion, chiles, ginger and garlic to a food processor or blender and process until smooth. Jerk Chicken Thighs Recipe

I ngredients 1 whole chicken, cut into 8 pieces (you can buy whatever cuts of chicken you like) Toast and grind the following in a dry skillet: 1/2 of 1 nutmeg 1 cinnamon stick 1 tablespoon coriander seeds 1 teaspoon cloves, whole 6 pimento seeds (allspice) 1 teaspoon black peppercorns In a blender or food processor puree: 1 bunch scallions, chopped 1 large onion, roughly chop 2 to 3 Scotch Bonnet peppers 10 sprigs thyme, leaves picked 10 garlic cloves Combine all of the above in a bowl and stir in the following: 1/2 cup fresh lime juice or white vinegar 1 cup soy sauce (GF Tamari) 1/2 cup raw sugar Read more at: http://www.foodnetwork.com/recipes/jerk-chicken-recipe0.html?oc=linkback

Eggnog Quick Bread

  Eggnog Quick Bread Prep 20  m Cook 40  m Ready In 1  h  10  m Recipe By: Bev "This eggnog bread would be good sprinkled with confectioners' sugar and served with Christmas breakfast." Ingredients 2 eggs, beaten 1 cup eggnog (lactose free or non dairy) 2 teaspoons rum flavored extract 1 cup white sugar (raw sugar) 1 teaspoon vanilla extract 1/2 cup butter, softened (Smart balance) 2 1/4 cups all-purpose flour (GF flour mix) 2 teaspoons baking powder 1/2 teaspoon salt (kosher) 1/4 teaspoon ground nutmeg Directions Preheat oven to 350 degrees F (175 degrees C). Grease bottom only of a 9x5-inch loaf pan, or three 3x5-inch loaf pans. Blend together the eggs, eggnog, rum extract, sugar, vanilla and butter. Sift together the flour, baking powder, salt and nutmeg. Add to eggnog mixture and stir just enough to moisten; pour into prepared pan or pans. Bake large loaf for 40 to 60 minutes, or until a tester inserted in the center com

Fried Plantains

I absolutely looooooooove fried plantains!!!!! These do not need an official recipe. The longest/hardest part of this recipe is waiting for the Plantains to ripen. If you're making this for a snack use one large overly ripe Plantain; if you're making these for a crowd   use 3 to 4 overly ripe Plantains. Peel (you have to cut them, these are NOT bananas) Plantains. Cut Plantains on the diagonal/bias. You do not need a ton of oil for this "recipe" I usually coat the pan with olive oil and put a nice big spoonful of Smart Balance and saute' the Plantains. Because of the natural sugar they tend to stick. :-( They're done when it's crispy around the edges and soft. Place on a paper towel to absorb the extra oil. Sprinkle kosher salt on them and ENJOY!!!! Optional: drizzle honey over the Plantains and then sprinkle kosher salt on top.

Christmas Eve - The 1st Day of Kwanzaa 2015

The Lil Chef's Rice Pudding for Christmas Eve Like to keep the calendar festive! The Homemade brown sugar/ honey coating I put on the outside of the ham. The making of more candied bacon!  The Veggies! Sauteed Kale and Garlic Corn all with onions (obviously) The final result: Candied butternut squash, tater tot stuffing, mac n cheese, apple cake, ham, lasagna, kale, broccoli, candied bacon, cranberry sauce, & garlic corn! Mommy's plate that I in no way finished! We enjoyed the lights in the dark. Christmas Morning: A joint gift from me My gift to myself, we know how I love Snoopy!                                              I waited so long to open this on Christmas morning This was my first time trying the fat free Reddi Whip. The texture is definitely different from the original, It was good on the apple cake.  The Lil Chef enjoying her presents Unfortuna
