Good Morning

GOOD MORNING!!!

I'm late, I know.
Today is a "rest day."
Today hasn't been eventful as far as food is concerned. I had a Gluten Free/Lactose Free Bologna sandwich [LiveGFree Whole Grain Gluten Free Bread from Aldi, Lactose Free American Cheese slices from Go Veggie, and Gluten Free Turkey Bologna from Butterball.] (it's much harder to find GF Bologna than you think. Should I technically be eating bologna of any sort?... NO, but whatever)
The Lil Chef made her pancake batter in advance last night for this morning. [Confetti Hungry Jack Gluten Free Pancake Mix.] (Who knew they had this?! Anyway she loves it, I'm not a huge fan of Confetti anything.)
Tonight, I need something easy to make for Dinner. I'm still a little fatigued and I have things to do tomorrow and a long day Thursday so I can't expend all of my energy cooking today. Tonight, we will have sauteed Salmon, sauteed broccoli, and mashed potatoes. I use Olive Oil and Smart Balance mixed to saute everything! (I completely came up with this meal by accident several months ago. Again, needing something quick I made salmon and broccoli; we had mashed potatoes leftover from who knows what, I warmed it up put it all together and viola! It's now one of our favorites!)

I found this on Pinterest. Several things I do miss about being allergy free. So happy they can be duplicated at home Make sure the minced onions are JUST onions. I personally would use kosher salt. Use raw sugar. Instead of sour cream use 0% greek yogurt. 

Homemade Taco Sauce

This is nice and uncomplicated! You know the only thing I'd change is the salt and make it kosher, other than that this recipe is clean. I haven't made it yet but I will the next time I need taco sauce! Homemade things are better!
