We Made The Tuna Casserole

First, how are you guys doing? Then, let me say I am extremely proud of myself. With me having multiple autoimmune disorders I drove for over 2 1/2hrs in total today, sat and visited with my brother for an hour, went to Aurora Farms Prime Outlet Center with The Lil Chef and my mom (& did a TON of shopping), went to the grocery store (in the middle of unexpected snow), came home and decided to do what?.... Make Tuna Casserole! (from the recipe I posted earlier this month on 10/9/15) Usually when I do too much, food doesn't come out too well but so far so good! There are a few minutes left on the timer before it comes out of the oven.

Of course I altered a few things, but I always do lol. I followed the recipe with my revisions but still changed some things. I had a half a bag of GF elbow noodles leftover so i bought another bad (not the same kind but it's ok) and mixed them. I made my own "cream of" base off the recipe I posted on 10/8/15, I was skeptical but it turned out magnificent! I doubled the recipe because the tuna casserole called for 1 can of cream of chicken and cream of mushroom soup and will be using this from now on! I used lactose free milk but feel free to use non dairy milk. I added mushrooms, celery, and onions to my "cream of" base. I added an extra can of tuna, so it's 3 instead of 2. Just about everything else is the same. I do think I should've added more cheese though.

I'd love to know how the casserole turns out for you when you make it and how you changed or didn't change the recipe.
