Gluten Free Vegan Rice Crispy Treats

The Lil Chef and  I were supposed to make this recipe months and months ago. I have no idea why we never got around to it but I'm so glad we waited, timing is everything! I used a combination of recipes like I usually do. We have had a couple of boxes of Malt O Meal gluten free Crispy Rice from the food pantry sitting around and we bought a bag of Dandies Marshmallows months ago because The Lil Chef really likes marshmallows. My Mommy brain was thinking Rice Crispy Treats, her brain was thinking to eat the whole bag. Enough rambling and on to the good stuff!!! Dandies Recipe: 1 10 oz bag of Dandies Marshmallows 5 cups Crisp Rice Cereal 2 Tbsp of Margarine 2 Tbsp of Coconut Oil Malt O Meal Recipe: 1/4 cup butter or margarine 1 10 oz package marshmallows or 4 cups miniature marshmallows) 1 tsp vanilla 6 1/2 cups Crispy Rice Cereal My Recipe: 2 Tbsp of Smart Balance 2 Tbsp of Coconut Oil 5 cups of Malt O Meal Crisp Rice Cereal 1 10 oz bag of Dand

Pancake Struggle!

Pancakes are the o n e thing I have had the hardest time with since having to change my diet and eat allergy free! It has been a constant struggle for me for about 7 years. The Lil Chef, on the other hand, has found tons of pancakes that she likes. I'm going to attempt this again this morning, of course with a combination of things. I hardly ever use just one mixture, it never really turns out right or the way I would like them. Fingers crossed. Let's see how this turns out. I'm using the last little pinch of my King Arthur's GF pancake mix, King Arthur's multi - purpose flour mix and the recipe from an old Trader Joe's GF flour bag I've had for a couple of years. Good Afternoon! I hope you guys are good! I am for the most part. "but"...   I had thoughts or better yet putting together my thoughts on a post that I wanted to do about how AMAZED I was about how much my/our diet had changed (which I still plan to talk about). I have like an OCD issue with numbers so I check my stats on everything, ALL the time. I was checking the stats on my "blog" and I noticed there were some posts from 2015 that someone had read. I am SO glad they did because I decided to go back and reread them myself. Ugh! Terrible! Not only did I noticed several days ago that our diets had changed drastically, so had my posts and their content (I can't say for better or worse, but it's different - to me anyway.) Rainbow Grilled Chicken Salad

I wouldn't change much about this salad. This salad is close to perfect! Allergy Free Mini Taco Cups

I was so NOT paying attention to the fact that it was "Tuesday", until The Lil Chef said "HEEEEY! It's Taco Tuesday Mom!" So, in honor of Taco Tuesday we are having Mini Taco Cups/Bowls. My original motivation for tacos was the Follow Your Heart Vegan Sour Cream that I FINALLY found at our newly opened Fresh Thyme Farmers Market! What better way to try sour cream but with tacos of some sort! I'm REALLY hoping I/we like it because I have SO MANY recipes that call for sour cream and that seems to be the only product that I haven't been successful in replacing. I've tried 0% Greek Yogurt and that was ok for a little while and then I found out that I wasn't only lactose free but I can not consume dairy at all .  I have tried non dairy plain yogurts and attempted to make my own out of coconut milk and that was a disaster so this HAS to work! lol My only concern is that it is all soy and that's a product I try to stay away from. #1 I'm not

Long John Silver Inspired GF Fish

3/20/17:  I've made "non beer" battered fish before and it's been good and not so good. The last time I made it, it came out way too crunchy and I LOVE crunchy foods. This time I'm going to use the recipe for The  Homemade Crispy Seasoned French Fries .  I've also learned to halve the recipe. The complete recipe makes enough for like 4-6 people. I will post the ingredients and let's see what happens. Ingredients: I have 3 thin pieces of yellowfin sole 1 cup all-purpose flour (Gluten free All Purpose flour) (I used a 1/2 cup of flour) 1 teaspoon garlic salt 1 teaspoon onion salt 1 teaspoon salt (Kosher Salt) 1 teaspoon paprika 1/2 cup water, or as needed (maybe because it was GF flour I used 3/4 cup) 1 cup vegetable oil for frying (Olive Oil/Sunflower Oil) Season to taste. YAAAAAYY!!!!! In the last post I left off by saying that I was really hoping that I would be chosen to be a Blogger/Official Blogger at the GFAF Expo in Schaumburg, IL; I got the email yesterday! EXCITING NEWS GF & AF Expo!!!!

I have some seriously EXCITING NEWS!!!!!!!! Probably more for myself and The Lil Chef than you guys. OK! So I can't remember if I put it on this website or one of my other medias but I have been dying to go to the GF & AF EXPO since I heard about it however long ago but it was just never the right time, etc. I actually won tickets a few months back but it was in CA. and I had absolutely NO WAY to get there! I was devastated. Then there was the "Natural Products Expo West" that just passed and I was seriously almost in tears because we were not there. Ok, I said all of that to say....... Chicken Gnocchi Soup

I Looooooove Gnocchi! But, with like so many other of my favorite dishes there were no allergy free alternatives until now! Chicken Gnocchi Soup Serves 6 Ingredients 1 pound store-bought gnocchi or use  this  recipe to make by hand (Gluten free gnocchi can be found in the grocery store, the brand I see the most is Delallo) 2 cups cooked chicken breast, cut into small cubes 1 1/2 cups spinach leaves, chopped (maybe make it a little healthier and add kale as well) 1 cup chicken broth (organic & gluten free) 1 cup white onion, chopped 3/4 cup carrots, finely chopped or julienned 1/2 lemon, juiced 2 sprigs rosemary (maybe italian seasoning for me) 2 cloves garlic, minced 2-3 tablespoons extra-virgin olive oil kosher salt and freshly ground pepper, to taste 1 3/4 cups heavy cream (So Delicious Coconut Culinary Cream Original, vegan, this is a link to show you what is looks like)  https://www.youtube.com/watch?v=E_-U280XZoQ 1 1/2 cups parmesan cheese, grated,
