Pancake Struggle!

Pancakes are the o n e thing I have had the hardest time with since having to change my diet and eat allergy free! It has been a constant struggle for me for about 7 years. The Lil Chef, on the other hand, has found tons of pancakes that she likes. I'm going to attempt this again this morning, of course with a combination of things. I hardly ever use just one mixture, it never really turns out right or the way I would like them. Fingers crossed. Let's see how this turns out. I'm using the last little pinch of my King Arthur's GF pancake mix, King Arthur's multi - purpose flour mix and the recipe from an old Trader Joe's GF flour bag I've had for a couple of years. Banana Oat Muffins

  Banana Oat Muffins Prep 15  m Cook 20  m Ready In 35  m Recipe By: Karen Resciniti "A healthy and delicious morning treat!" Ingredients 1 1/2 cups unbleached all-purpose flour (GF AP flour) 1 cup rolled oats (GF if you have them) 1/2 cup white sugar (raw sugar) 2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt (kosher)   1 egg (vegan egg or egg replacer if necessary) 3/4 cup milk (non dairy) 1/3 cup vegetable oil (sunflower oil) 1/2 teaspoon vanilla extract 1 cup mashed bananas Directions Combine flour, oats, sugar, baking powder, soda, and salt. In a large bowl, beat the egg lightly. Stir in the milk, oil, and vanilla. Add the mashed banana, and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Line a 12-cup muffin tin with paper bake cups, and divide the batter among them. Bake at 400 degrees F (205 degrees C) for 18 to 20 minutes. ALL RIGHTS RESERVE...

Gluten-Free Banana Oat Waffles

Ingredients 2 cups old-fashioned rolled oats (certified gluten-free if necessary) 1 cup unsweetened vanilla almond milk or other milk (non dairy) 1 1/2 teaspoons pure vanilla extract 2 large eggs 1 medium ripe banana 1 teaspoon cinnamon 1 teaspoon baking powder 1 packet stevia (I would use raw sugar) Optional toppings Nut butter Coconut butter or oil Honey or maple syrup Fresh fruit Directions Preheat waffle iron on the highest setting, and mist with cooking spray. Blend all ingredients in a blender until almost smooth. Pour about 3/4 cup batter onto preheated waffle iron. Allow waffle to cook. Repeat with remaining batter. (Recipe yields 4 waffles.) Enjoy with your favorite toppings!
