Pizza 🍕

#CookingWithMommy #GoodMorning OK, so the other day we were supposed to have #Pizza 🍕 for breakfast but the #Ingredients were frozen so I decided to make the #Vegan #Spinach & #ArtichokeDip 1st. This was our 1st time trying the @enjoylifefoods #GlutenFree #PizzaDough I have to say I definitely underestimated it. As far as taste it's in my top 5. As far as my #FoodIntolerances it's number 1. I can actually have this and not get "sick"... Kinda - because this dough is #Healthy (it includes #probiotics) TMI, it set off my #IBS, foods that are "too" healthy are a problem for me (I just won't eat as much the next time) I will be making the switch and I do recommend this! It's a little pricey but you can make 2 pizzas from 1 mix. #Flexitarian gluten free #DairyFree #SoGood #SoyFree #NonGMO #NoActiveYeast

VEGAN RICE PAPER BACON STRIPS

I am very interested in trying this! I do like Bacon but more recently I haven't been feeling too well when I eat it. If this works I will definitely switch!  Looks real. Tastes real. 100% plant based. Try this as a substitute the next time you cook bacon! 25 min Prep Time 10 min Cook Time 35 min Total Time Ingredients 8 rice paper wrappers 2 Tbsp oil - coconut or olive oil 3.5 Tbsp  organic tamari  - for soy free use  coconut aminos 4.5 Tbsp  nutritional yeast .5 tsp  liquid smoke .5 Tbsp maple syrup (this only gives a slight sweetness to round out the flavors, but you can feel free to omit or reduce it) 1/4 tsp ground black pepper 1/8 tsp paprika OPTIONAL: balsamic vinegar, for marbling effect if desired (I would love the marbling but I do not like Balsamic Vinegar. I think I'll try it at least once though) Instructions Preheat oven to 400 degrees F. Whisk together all ingredients except rice paper (and optional balsamic) ...

Loaded Broccoli Cheeze & Potato Soup

Loaded Broccoli and Cheese Soup   Ingredients 2 - 14.5 oz. cans chicken broth (I'm going to use Chef's Cupboard Fat Free Chicken Cooking Stock From Aldi, this if Gluten and Yeast Free) 2-3 large carrots, peeled and diced (I'm cheating and using Canned Carrots) 4 medium potatoes, peeled and cubed into small pieces 1 tsp. onion powder 2 small heads broccoli (washed and diced small) (I'm using Frozen Broccoli) 3 TB butter (Smart Balance) ⅓ cup flour (Gluten Free Flour Blend) 3½ cups milk (I'm using unsweetened Cashew Milk) 4 cups shredded cheddar cheese (Daiya Cheddar Cheeze Shreds) 1 tsp. salt (Kosher Salt) ½ tsp. garlic pepper 6 slices bacon, cooked and chopped I am going to add some Creamed Corn to give it a Corn Chowder feel (GF of course) Instructions In a large pot combine chicken broth, carrots potatoes and onion powder. AVOCADO PASTA SALAD

Ingredients Salad 8 oz rotini or bow tie pasta (gluten free) 1 cup cherry tomatoes, diced 8 slices bacon, cooked crisp & crumbled 1 green onion, thinly sliced 2 tablespoons chopped cilantro 1 avocado, diced 1 teaspoon lime juice Dressing 1 ripe Avocado ½ fresh Lime, juiced ¼ cup chopped cilantro ½ teaspoon cumin ½ teaspoon garlic powder ½ Cup Buttermilk (I would omit, or find/make a dairy free alternative) salt & pepper to taste (kosher salt) Instructions Dressing Place all dressing ingredients in a blender and process until smooth. Salad Cook pasta according to package directions. Drain and run under cold water. Toss diced avocado with lime juice. Combine all ingredients in a large bowl gently toss with dressing. BLT Salad with Avocado

BLT Salad with Avocado Ingredients 12 slices lean, center-cut bacon, cooked and chopped 4 Roma tomatoes, chopped 1/4 cup light mayonnaise (I really like just regular salad dressing ) 1/8 teaspoon kosher salt Fresh black pepper, to taste 6 cups chopped Romaine lettuce 1 medium (about 4 ounces) Hass avocado, diced Directions In a medium bowl, combine the diced tomatoes with the mayonnaise, and season with a little salt and fresh cracked pepper. Set aside for about 10 minutes to let the tomatoes release their juices as this will be the “dressing” to your salad. To serve, divide the chopped lettuce and tomatoes onto 4 plates, then top each with diced avocado and chopped bacon.
