10/21/22      8:59pm  Heeeey! Hello! I miss you guys! It has been so much going on! I have been trying to figure out what to do with this blog, and how to approach it. I definitely don't want to shut it down forever (I have to admit, at one point, I was beyond tempted!)      So, the reason why I'm here is actually related to my last post, which was WAY back in MARCH!!! Gluten Free Rp Pasta = Amazing!

#CookingWithMommy I'm behind several posts but this deserved to be pushed to the front of the line! Thank you @rpspasta for giving us the opportunity to try your #GlutenFree #Pasta. This is /was #AMAZING I didn't really have a #recipe, just trying to remember flavors that matched what I remembered #spinach #Fettuccine to taste like. First, the package stated that the pasta on its own was really flavorful (I'm thinking all companies say that) and toss with something light. I tasted the pasta to see if it was done and it was really good just by itself! (I salted the pasta water prior to cooking) I melted some #SmartBalance and added #OliveOil, #MincedGarlic, #DicedOnions, #Seasonings, #Parsley and #Shrimp. Pizza 🍕

#CookingWithMommy #GoodMorning OK, so the other day we were supposed to have #Pizza 🍕 for breakfast but the #Ingredients were frozen so I decided to make the #Vegan #Spinach & #ArtichokeDip 1st. This was our 1st time trying the @enjoylifefoods #GlutenFree #PizzaDough I have to say I definitely underestimated it. As far as taste it's in my top 5. As far as my #FoodIntolerances it's number 1. I can actually have this and not get "sick"... Kinda - because this dough is #Healthy (it includes #probiotics) TMI, it set off my #IBS, foods that are "too" healthy are a problem for me (I just won't eat as much the next time) I will be making the switch and I do recommend this! Gluten Free Vegan Rice Crispy Treats

The Lil Chef and  I were supposed to make this recipe months and months ago. I have no idea why we never got around to it but I'm so glad we waited, timing is everything! I used a combination of recipes like I usually do. We have had a couple of boxes of Malt O Meal gluten free Crispy Rice from the food pantry sitting around and we bought a bag of Dandies Marshmallows months ago because The Lil Chef really likes marshmallows. My Mommy brain was thinking Rice Crispy Treats, her brain was thinking to eat the whole bag. Enough rambling and on to the good stuff!!! GFAF Expo - Update!!!

YAAAAAYY!!!!! In the last post I left off by saying that I was really hoping that I would be chosen to be a Blogger/Official Blogger at the GFAF Expo in Schaumburg, IL; I got the email yesterday! This is a ridiculously HUGE deal for me because of my chronic illnesses, chronic pain, and multiple autoimmune disorders. I have not had the courage to really step out there and do anything "big" as a "Blogger". The right door opened at the right time and I actually had the courage to step through it this time. EXCITING NEWS GF & AF Expo!!!!

I have some seriously EXCITING NEWS!!!!!!!! Probably more for myself and The Lil Chef than you guys. OK! So I can't remember if I put it on this website or one of my other medias but I have been dying to go to the GF & AF EXPO since I heard about it however long ago but it was just never the right time, etc. I actually won tickets a few months back but it was in CA. and I had absolutely NO WAY to get there! I was devastated. Then there was the "Natural Products Expo West" that just passed and I was seriously almost in tears because we were not there. Ok, I said all of that to say....... Taco Salad with Creamy Cilantro Dressing

PREP 15 MIN COOK N/A YIELD 4-6 Ingredients salad: 1 Head of Romaine Lettuce 1 15 oz. can of Black Beans, rinsed and drained 1 Bell Pepper, orange or yellow 1 Pint Cherry Tomatoes 2 C. Frozen Corn, thawed 5 Green Onions 1 Avocado, diced dressing: 1 C. Cilantro, stems removed and roughly chopped ½ Avocado ½ C.  So Delicious Dairy Free Plain Coconut Milk Yogurt Alternative 2 Tbsp. Fresh Lime Juice, more to taste 1-2 Garlic Cloves ¼ C. Olive Oil 1 1/2 tsp. White Wine Vinegar 1/8 tsp. Salt I would probably make extra, I love extra sauce! tortilla crisps: 2-3 Corn Tortillas (or flour if not making gluten-free) (I will personally use Gluten Free Corn Chips) 1/4 C. Olive Oil Directions To Prep the Salad and Dressing: Blend all ingredients for the dressing in a food processor until smooth. Finely chop the fresh veggies. Drain and rinse the beans. VEGAN RICE PAPER BACON STRIPS

I am very interested in trying this! I do like Bacon but more recently I haven't been feeling too well when I eat it. If this works I will definitely switch!  Looks real. Tastes real. 100% plant based. Try this as a substitute the next time you cook bacon! 25 min Prep Time 10 min Cook Time 35 min Total Time Ingredients 8 rice paper wrappers 2 Tbsp oil - coconut or olive oil 3.5 Tbsp  organic tamari  - for soy free use  coconut aminos 4.5 Tbsp  nutritional yeast .5 tsp  liquid smoke .5 Tbsp maple syrup (this only gives a slight sweetness to round out the flavors, but you can feel free to omit or reduce it) 1/4 tsp ground black pepper 1/8 tsp paprika OPTIONAL: balsamic vinegar, for marbling effect if desired (I would love the marbling but I do not like Balsamic Vinegar.
