Slow Cooker Parmesan Garlic Herb Chicken is such an easy meal that is packed with amazing flavor! The potatoes cook to tender perfection in garlic, parmesan, and fresh herbs and the chicken is perfectly juicy. This makes a great meal in one!

Serves: 4-6
Ingredients
  • 2 Tablespoons butter (vegan)
  • 2 pounds bone-in chicken thighs, can also use boneless thighs or boneless chicken breasts
  • 2 pounds baby red potatoes, quartered (whatever potatoes you have)
  • 4 garlic cloves, minced (jarred, minced garlic, in olive oil, if you don't have fresh garlic)
  • ½ cup grated parmesan cheese (pecorino or vegan)
  • 1 tablespoon chopped fresh parsley (dried if you don't have fresh) 
  • 1 tablespoon fresh thyme, finely chopped 
  • 1 tablespoon oregano, finely chopped
  • I would use Italian seasoning
  • ⅓ cup olive oil 
  • salt and pepper to taste (kosher)
  • freshly grated parmesan cheese for serving (pecorino or vegan)
  • garnish with fresh parsley
  • I would add extra seasonings
Instructions
  1. In a large skillet over medium-high heat add the butter and melt. Salt and pepper the chicken and add to the skillet. Sear on each side for 1-2 minutes or until nicely brown on each side. Set aside.
  2. In a 5-6 quart slow cooker add potatoes, garlic, parmesan cheese, parsley, thyme, oregano, and mix. Season with salt and pepper. Drizzle in olive oil and mix until coated.
  3. Add the chicken to the slow cooker and cover. Cook on low for 6 hours or high for 4 or until potatoes are tender. Top generously with freshly grated parmesan cheese. Garnish with fresh parsley.

Backstory: My friend introduced me to this AMAZING fried rice about 6yrs ago. She asked did I want "fried rice" (I'm thinking "traditional" fried rice) OH NO! I really really hope that I can make this recipe work! I received some teff flour from the food pantry and I had NO idea what to do with it. I am so happy I found this recipe!
