Side Note - I'm trying something new. I mentioned before I'm a baby blogger, never intended to do the blogging thing "for real" but after my trip to the GFAF Expo, I'm reconsidering that decision. The first step, I wanted to change the theme/layout of the blog. I loved my previous layout, it was really cute but something about it was bugging me. I'm going to test drive this and see how I feel or see if the interaction with the page changes.  I'm going to spend some time researching "how to have a successful blog". I still intend to be "just me", honest, and funny (to me anyway - lol). I have some major reviews coming up due to the Expo trip but other than that the converting of the recipes remain the same. I was thinking about adding some different content - that's still on the back burner for the time being. I will come back to that... Back to my original post -  I figured out the problem! After all of these years in...

GFAF Expo / šŸŒŽ Day (4/22/17)

First, I'm just excited that we made it to Illinois safely yesterday! Secondly, today was amazing (what a way to celebrate Earth 🌎 Day!) The Lil Chef and I met some really awesome people and tried tons of new products at the Gluten Free Allergen Friendly Expo in Schaumburg, IL It felt so weird to go some where, outside of home, eat and not get sick. I snacked and tasted and drank and NOT one stomach issue, no migraines, no symptoms! Actually being able to eat with no symptoms was a surreal feeling. I invited my cousin and her daughter (from Indiana) who also has food allergies and we will be attending tomorrow as well. Any chance I get to show someone else, someone new the many options that "food allergy people" have, I'm taking it! I love that these types of events exist! We have options and the majority of them are healthy/good for you. Slightly off the food subject for a second. I am in shock that I feel as well as I do. I'm sure all of the heal...

Gluten Free Rp Pasta = Amazing!

#CookingWithMommy I'm behind several posts but this deserved to be pushed to the front of the line! Thank you @rpspasta for giving us the opportunity to try your #GlutenFree #Pasta. This is /was #AMAZING I didn't really have a #recipe, just trying to remember flavors that matched what I remembered #spinach #Fettuccine to taste like. First, the package stated that the pasta on its own was really flavorful (I'm thinking all companies say that) and toss with something light. I tasted the pasta to see if it was done and it was really good just by itself! (I salted the pasta water prior to cooking) I melted some #SmartBalance and added #OliveOil, #MincedGarlic, #DicedOnions, #Seasonings, #Parsley and #Shrimp. I let that sit and marinate while I made the pasta. I have a picky eater so I couldn't add the #Fresh #Organic #Tomatoes and #Pecorino until it was in my bowl. Speaking of my bowl, I had 2! I completely went over my calories on my #MyFitnessPal #App but it was totally ...

Slow Cooker Chicken and Mushrooms

The next set of posts will be Slow Cooker recipes. I have a slow cooker/crockpot that I don't use much, a ton of chicken I'm running out of ideas for and not enough energy to keep making things from scratch, sometimes you need a break (plus who really wants to cook when it's really warm outside?) I'm going to give this Slow Cooker thing a try!!! Crockpot and Chicken here we come!!! Slow Cooker Chicken And Mushrooms 30 minutes active; 4 hours inactive to prepare Serves 4-6 INGREDIENTS 1 1/2 pounds of chicken 2 tablespoons oil (olive oil) 16 ounces crimini mushrooms, sliced (I will probably use button) 1 yellow onion, sliced  2 cloves garlic, minced (I usually use the minced garlic in the jar) Salt and pepper to taste (kosher salt)  Feel free to add more seasonings, I am! 1/4 cup fresh parsley, chopped (I tend to use dried parsley) 1 1/2 cups chicken broth (Non GMO, Gluten and Yeast Free) 2 tablespoons cornstarch (Gluten Free) Remember, fe...

Pizza šŸ•

#CookingWithMommy #GoodMorning OK, so the other day we were supposed to have #Pizza šŸ• for breakfast but the #Ingredients were frozen so I decided to make the #Vegan #Spinach & #ArtichokeDip 1st. This was our 1st time trying the @enjoylifefoods #GlutenFree #PizzaDough I have to say I definitely underestimated it. As far as taste it's in my top 5. As far as my #FoodIntolerances it's number 1. I can actually have this and not get "sick"... Kinda - because this dough is #Healthy (it includes #probiotics) TMI, it set off my #IBS, foods that are "too" healthy are a problem for me (I just won't eat as much the next time) I will be making the switch and I do recommend this! It's a little pricey but you can make 2 pizzas from 1 mix. #Flexitarian gluten free #DairyFree #SoGood #SoyFree #NonGMO #NoActiveYeast

Gluten Free Dairy Free Irish Soda Bread

I have been procrastinating for a couple of years (seriously) with making Irish soda bread. My mom gave me a recipe or 2 and I have like 5-6 different versions pinned on Pinterest. I think this recipe is finally simple enough for me to feel comfortable to make. I'm seriously hoping this will help in my efforts to reduce my yeast intake. Yeast is literally in everything so having a Candida Overgrowth is killer!    Irish Soda Bread Dry Ingredients: -1 1/2 cups white rice flour  (I will combine the measurements for the flour and use the GF flour mix I have from the store, I'm currently using Pillsbury GF Flour mix) -1/2 cup tapioca flour -1/2 cup white sugar (Raw Sugar) -1 teaspoon baking soda -1 teaspoon baking powder -1 teaspoon salt (Kosher Salt) Wet Ingredients: -1 large egg -1 cup buttermilk (if dairy-free use  buttermilk substitute ) (for a sweet version I'll use Vanilla Almond milk and for a savory or plain version, unsweetened cashew or almond milk ...

BROCCOLI CHEESE LOADED TWICE BAKED POTATOES

BROCCOLI CHEESE LOADED TWICE BAKED POTATOES THESE WERE AMAZING!!!!!  PRINT RECIPE INGREDIENTS: 4 russet potatoes (I used 5 but 2 were on the small side) 1/2 cup sour cream (vegan but I did not have any sour cream. I used Daiya Ranch dressing to top them) 2 ounces cream cheese, softened (vegan Daiya cream cheese) 2 - 4 tablespoons chicken broth, as needed (GF, YF I did not measure & used this to steam the broccoli) 6 ounces chopped broccoli florets, steamed (non-GMO if possible) 1 cup Tillamook® Medium Cheddar Cheese, grated (vegan Daiya cheddar shreds) 1 green onion, sliced 8 slices cooked bacon, crumbled (GF) DIRECTIONS: Preheat oven to 375 degrees F. Using a fork, pierce the potatoes all over. Cook the potatoes until tender.(See this link for the instructions I like best for  making a perfect baked potato .) Or you can simply use the “baked potato” function on your microwave if you prefer. (I used the "potato" function...

Gluten Free Vegan Rice Crispy Treats

The Lil Chef and  I were supposed to make this recipe months and months ago. I have no idea why we never got around to it but I'm so glad we waited, timing is everything! I used a combination of recipes like I usually do. We have had a couple of boxes of Malt O Meal gluten free Crispy Rice from the food pantry sitting around and we bought a bag of Dandies Marshmallows months ago because The Lil Chef really likes marshmallows. My Mommy brain was thinking Rice Crispy Treats, her brain was thinking to eat the whole bag. Enough rambling and on to the good stuff!!! Dandies Recipe: 1 10 oz bag of Dandies Marshmallows 5 cups Crisp Rice Cereal 2 Tbsp of Margarine 2 Tbsp of Coconut Oil Malt O Meal Recipe: 1/4 cup butter or margarine 1 10 oz package marshmallows or 4 cups miniature marshmallows) 1 tsp vanilla 6 1/2 cups Crispy Rice Cereal My Recipe: 2 Tbsp of Smart Balance 2 Tbsp of Coconut Oil 5 cups of Malt O Meal Crisp Rice Cereal 1 10 oz bag of...

Pancake Struggle!

Pancakes are the o n e thing I have had the hardest time with since having to change my diet and eat allergy free! It has been a constant struggle for me for about 7 years. The Lil Chef, on the other hand, has found tons of pancakes that she likes. I'm going to attempt this again this morning, of course with a combination of things. I hardly ever use just one mixture, it never really turns out right or the way I would like them. Fingers crossed. Let's see how this turns out. I'm using the last little pinch of my King Arthur's GF pancake mix, King Arthur's multi - purpose flour mix and the recipe from an old Trader Joe's GF flour bag I've had for a couple of years. Too bad I can't find it anymore at Trader Joe's.  (I'm going to type out the original recipe and show you my revisions below)  Trader Joe's GF Pancakes 1 2/3 cups gluten-free flour (I mixed the last little bit of King Arthur's pancake mix and the multi-p...

Amazed! / Personal

Good Afternoon! I hope you guys are good! I am for the most part. "but"...   I had thoughts or better yet putting together my thoughts on a post that I wanted to do about how AMAZED I was about how much my/our diet had changed (which I still plan to talk about). I have like an OCD issue with numbers so I check my stats on everything, ALL the time. I was checking the stats on my "blog" and I noticed there were some posts from 2015 that someone had read. I am SO glad they did because I decided to go back and reread them myself. Ugh! Terrible! Not only did I noticed several days ago that our diets had changed drastically, so had my posts and their content (I can't say for better or worse, but it's different - to me anyway.) I've come across more than several pictures that have crashed, which I was not happy about at all!!! When Blogger changed some of the settings it really had an effect on the content of my posts. I apologize if you have come across or...

Rainbow Grilled Chicken Salad

I wouldn't change much about this salad. This salad is close to perfect! INGREDIENTS Servings: 4–5 2 chicken breasts (I might use chicken tenders) 1 teaspoon salt (kosher salt) ½ teaspoon black pepper ½ teaspoon chili powder ½ teaspoon cumin ½ teaspoon garlic powder ½ teaspoon oregano 1 tablespoon olive oil Dressing 1 cup sour cream (vegan) ¼ cup cilantro, minced  (non-gmo, organic) ¼ teaspoon pepper ¼ teaspoon salt (kosher salt) 1 tablespoon lime juice Salad 1 head romaine, chopped (non-gmo, organic) ½ cup red onion, diced  (non-gmo, organic) ½ cup tomatoes, diced  (non-gmo, organic) ½ cup orange bell pepper (non-gmo, organic) ¾ cup corn  (non-gmo, organic) ½ cup cilantro, chopped  (non-gmo, organic) ¼ cup jalapeƱo, diced (this would be optional for me, green chiles would definitely be an option for me) Garnish Avocado  (non-gmo, organic) Tortilla strips (Gluten Free) How To Video   - watch how to make this awesome salad!!!...

Allergy Free Mini Taco Cups

I was so NOT paying attention to the fact that it was "Tuesday", until The Lil Chef said "HEEEEY! It's Taco Tuesday Mom!" So, in honor of Taco Tuesday we are having Mini Taco Cups/Bowls. My original motivation for tacos was the Follow Your Heart Vegan Sour Cream that I FINALLY found at our newly opened Fresh Thyme Farmers Market! What better way to try sour cream but with tacos of some sort! I'm REALLY hoping I/we like it because I have SO MANY recipes that call for sour cream and that seems to be the only product that I haven't been successful in replacing. I've tried 0% Greek Yogurt and that was ok for a little while and then I found out that I wasn't only lactose free but I can not consume dairy at all .  I have tried non dairy plain yogurts and attempted to make my own out of coconut milk and that was a disaster so this HAS to work! lol My only concern is that it is all soy and that's a product I try to stay away from. #1 I'm not...
