"Asian Night"

I decided to try baking the eggrolls this time because frying them turned into a burnt disaster! Again, I know what I did wrong this time as well. Were these a disaster? No, but there was a ton of room for improvement. I followed the recipe for the filling last time (which I will not do again). The recipe is fine, it just didn't work for me. I used all of the ingredients that they said I needed but I put them together my own way. I did not measure, just to taste. In addition to baked egg rolls, we had Chicken and Broccoli Stir-Fry (I added shrimp to it, for me). First, I doubled the sauce because I thought the noodles would have soaked up the extra liquid, especially because I had twice what the recipe called for. Secondly, The Lil Chef overcooked the noodles (no worries, she is still learning).  It's ok because I LOVE extra sauce on almost everything! And, the stir-fry turned out really really good. When I make it again, I'll still double the sauce but only add the "normal" amount and then add extra if I/we need it.

I am going to put egg rolls back on the menu for next month. The problem is that I put entirely too much filling in the middle of the wrappers. I am going to try again with the lasagna wrappers, the spring roll wrappers, baking, and frying. I am determined to get this right! The taste is on point, the method, not so much. I can do this!

This was my first time using the Brandless Olive Oil Cooking Spray. It is forceful coming out of the nozzle, that totally threw me off guard. Hopefully, I will know better the next time, how to control it. So far so good, of course. I haven't used cooking spray for so long, I can't remember what to use it for. (lol)

I think my next big project will be chicken fried cauliflower bites. I've made them several times (but, that's when I was on a blog hiatus). The challenge this time is that I had so much raw cauliflower leftover, I cut it up and put it in the freezer. The question is..... Can I fry it from frozen with the coating/batter on it? Do I let it unthaw completely, then try to fry it? Do I let it semi-thaw then batter it, then fry it? Ugh! so many variables! I will try them all and see what happens lol! I will try my best to bring you guys along for the ride. Sometimes things get crazy and pictures aren't an option.

Homemade Taco Sauce

This is nice and uncomplicated! You know the only thing I'd change is the salt and make it kosher, other than that this recipe is clean. I haven't made it yet but I will the next time I need taco sauce! Homemade things are better!

Hough Bakery - butter cookies

Hough Bakery By  Gail Greenberg   &   Diane Rolfe Hough Bakery was an integral  part of me and my family's lives, (most people in Cleveland for that matter) I was heartbroken when they closed. I have  always remembered the cookies and doughnuts from this magical bakery. Their products were like nothing I had ever had before (and it was extra  magical because I was so little/young) I have been searching for about 30 years for something similar - no luck... but, thank goodness there are a few recipes floating around the internet! Unfortunately  even with Archie's being open, my food afflictions will not allow  me to enjoy those old time favorites. Luckily, converting is what I do and that's what this site is about so I  will switch some things  around and see how it turns out! The recipe below is just ONE of my all time favorites, please enjoy! Memories of a signature blue-and-white, string-tied cake box filled with a streusel coffee cake, hot cross buns, stick

Homemade Seasonings

I found this on Pinterest. Several things I do miss about being allergy free. So happy they can be duplicated at home Make sure the minced onions are JUST onions. I personally would use kosher salt. Use raw sugar. Instead of sour cream use 0% greek yogurt.
