Ghanaian Jollof Rice

Ingredients: 1 medium size onion – thinly sliced or chopped 1 medium size tomato – de-skinned and chopped Few sprigs of fresh thyme, or a sprinkle of dried thyme 1 teaspoon chilli powder 2 teaspoons shrimp stock (GF) 1 teaspoon tomato puree Cooking oil (olive oil) Basmati rice – washed Water Frozen vegetables From the many Jollof Rice recipes I've looked up and at, you can add chicken or shrimp to this dish. Serves 2 Method: Sauté the onions until soften for about 2 minutes on a medium heat. Add the chopped tomato and the fresh thyme. Stir until tomato softens. Then add the tomato puree, chilli powder and shrimp stock. Stir for a few seconds and then add the washed rice. Coat the rice in the gravy for a few seconds. Then add water. Taste the seasoning, add salt if you think necessary. Reduce the heat to low and let the rice cook for about 20 minutes. Add the frozen vegetables and stir gently into the rice. Breakfast

My phone camera sucks! It so didn't look like this in person! Yes, Yes, Yes... I know this doesn't look all that appealing but!!!!... I really needed a break from all the carbs and sugar (ok yes I know your body processes corn the same way it does sugar/carbs) so I sauteed me some more kale and onions, mixed it with the last of my garlic corn from christmas dinner and voila this was my breakfast.  I really need to find some healthier meals to eat. I feel like I have completely fallen off the healthy wagon. Allergy free food does NOT necessarily equal Healthy! I have some work to do. (In response to an earlier post, I think my New Year's resolution will be to try to eat healthier. Seriously!)

West African Lime Cake Recipe

INGREDIENTS SERVINGS 12 YIELD 12   squares UNITS US 1 cup  sugar   (raw sugar) 2  1 ⁄ 2 tablespoons  butter   (smart balance) 2 eggs 1 lime, juice of 1  1 ⁄ 2 cups  flour   (GF flour mix) 2  1 ⁄ 4 teaspoons  baking powder   (GF) chopped  peanuts  (optional) DIRECTIONS Cream the sugar and butter, add the well beaten eggs and the lime juice, then the flour and baking powder. Pour into greased and floured 8" square cake pan and bake at 350 degrees for 25 minutes, or until straw stuck into center comes out clean. Sprinkle chopped peanuts on top for garnish if you like. South African Yellow Rice

INGREDIENTS Nutrition SERVINGS   4 UNITS   US 1 cup  long grain white rice 1 ⁄ 2 teaspoon  salt 1  1 ⁄ 2 teaspoons  ground turmeric 3 tablespoons  white sugar   (raw sugar) 1 ⁄ 2 teaspoon  ground cinnamon 1 ⁄ 2 cup dark seedless raisins 1 tablespoon  butter 2  1 ⁄ 2 cups  water (Usually when we make or eat yellow rice, it's just white rice with turmeric, kosher salt, pepper, and cajun seasoning. The Lil Chef said she wants to try this. ) DIRECTIONS In a saucepan, combine the rice, salt, turmeric, sugar, cinnamon, raisins, butter and water. Bring to a boil uncovered. When it comes to a boil, reduce the heat to low, cover and let it simmer for 20 to 30 minutes, or until rice is fluffy and water has been absorbed. Remove from the heat and fluff with a fork. PEPPERONI PIZZA STUFFED MUSHROOMS

PEPPERONI PIZZA STUFFED MUSHROOMS I definitely want to do this! I think this would be a good idea to serve  INGREDIENTS 12 to 15 large mushrooms, cleaned and stems removed 2 mini pepperoni links, sliced (GF) ¼ cup pizza sauce (I love Francesco Rinaldi) 1 cup mozzarella cheese  (non dairy or LF, I like GoVeggie) freshly ground black pepper 1 fresh basil leaf, chopped INSTRUCTIONS Preheat oven to 450 F degrees. If you're using a cast iron skillet spray it with cooking spray. Arrange the mushrooms in the skillet. Fill each mushroom with about 1 to 2 tsp of pizza sauce. Top each mushroom with 1 to 2 tbsp of mozzarella cheese, then with 2 or 3 pepperoni slices. Bake for about 15 to 18 minutes, or until cheese melts and gets a bit golden on top. Christmas Eve Dinner

Yes, we are definitely stuffed!!!! So glad everything turned out great! Christmas Dinner had be switched to Christmas Eve Dinner due to The Lil Chef's schedule. We're going to sit back and digest and try to make room for the APPLE CAKE!!!!
