I DID IT!!!! "Easy Vegan Mac n Cheeze"


HEEEEEEEEY I DID!!!!!!! Ok I had not planned to cook anything for Easter but we received a free huge ham from the food pantry so ...... Since my plans changed I decided to make the ham, vegan mac n cheese, sauteed broccoli, a "baked" sweet potato for me and gluten free french baguettes.
Back to what I was originally saying, I used the recipe I posted on 3/15/16. I felt it was too good to be true, but it worked. Yes, I did add a little here and there. (I added the link to the original recipe at the bottom of the page) 

This is what I did:
The ingredients are really simple, I added the garlic seasonings and paprika. All I had to do was boil the GF noodles, drain them, put them back in the pot, and add the ingredients. The recipe called for 2tbs of Earth Balance , I used to huge 2 "Kitchen tablespoons" of Smart Balance. I put the exact amount of milk and nutritional yeast. The recipe called for 1/4 tsp of salt, (at some point you might have seen your mother or grandmother put seasonings in the palm of her hand, it roughly equals between 1 tsp to 1/4 tsp of course depending on how much you put in your hand, if you cook enough you know how to eyeball it)
I put a small palm of salt in it. 



 

The picture on the left are all of the ingredients in one pot, the right picture is when the Daiya cheese started to break down. It's starting to look like the picture from the original recipe!!!!
Oh yeah, I also added a large pinch of cheese from another bag of Daiya.

TA-DAAAAAAAAA! It looks like the Amy's Dairy Free, Gluten Free Frozen Mac N Cheeze.


Ok I had to make myself feel like I put in a lot of work so I sprinkled a little paprika on it. lol

This is nice and uncomplicated! You know the only thing I'd change is the salt and make it kosher, other than that this recipe is clean. I haven't made it yet but I will the next time I need taco sauce! Homemade things are better!

Homemade Seasonings

I found this on Pinterest. Several things I do miss about being allergy free. So happy they can be duplicated at home Make sure the minced onions are JUST onions. I personally would use kosher salt. Use raw sugar. Instead of sour cream use 0% greek yogurt.
