Girl's Day Out! 1/30/16

For those of you who do not follow me on instagram. The Lil Chef and I had an awesome Mommy/Baby date! We were a little late seeing Star Wars but it was worth it! We pretty much had the theater to ourselves! We were supposed to go to an Indian Cafe for lunch but we didn't make it in time so we went to Ruby Tuesday, I got my free Birthday Burger. I got an Avocado Turkey Burger w/no cheese. I found this on Pinterest. Several things I do miss about being allergy free. So happy they can be duplicated at home Make sure the minced onions are JUST onions. I personally would use kosher salt. Use raw sugar. Instead of sour cream use 0% greek yogurt.

MEXICAN TURKEY LETTUCE WRAPS Author:  Pancake Warriors Recipe type:  Dinner Serves:  4 These Mexican Turkey Lettuce Wraps are such a simple dinner idea! Naturally gluten free, low fat, and easy to make, these lettuce wraps area family favorite and kids love them! INGREDIENTS 1 lb. ground turkey 1-2 zucchini squash, cubed 1-2 summer squash, cubed ½ cup brown jasmine rice 1 cup water 2 tsp cumin, divided 2 tsp. chili powder 1-2 tbs. water salsa ¼-1/2 cup goat cheddar cheese INSTRUCTIONS In a medium sized pot, add ½ cup rice and 1 cup of water or vegetable stock, bring to a boil, and reduce down to medium low heat. Cook 30 minutes total. While rice is cooking, chop the zucchini and summer squash into cubes. in a large saute pan, add nonstick spray or coconut oil and saute the veggies 6-10 minutes until tender but not mushy. Turkey Salisbury Steak w/ Covered & Smothered Potatoes

EASY TURKEY SALISBURY STEAKS Author:  Mary Ellen Recipe type:  Turkey, Dinner Prep time:   10 mins Cook time:   20 mins Total time:   30 mins Serves:  Serves 4 INGREDIENTS 1 lb. ground turkey 1 cup diced onion - divided 3 - 4 tablespoons minced parsley (can be omitted) ¾ cup panko or breadcrumbs (gluten free) salt and pepper ½ cup milk -divided use (non dairy/lactose free) Campbell's Soups for Easy Cooking Savory Portabella Mushroom (Refer to my  Cream Of  recipe and add Portabella Mushrooms or any mushrooms you like) ¼ cup water INSTRUCTIONS Put the ground turkey, ½ cup onion, parsley, panko, salt, pepper and ¼ cup milk in a bowl. Mix until thoroughly incorporated. Divide into 4 pieces. Pat out into an oblong pattie. Spray a pan with cooking spray. Brown both sides of the patties over medium heat. Add the onions when you flip the patties over. Allow to brown a little. When both sides of the patties are browned add ¼ cup of water

My 35th Birthday!!! 1/25-1/27/16

                                                           The Star of the day!!!! Tuna Melt for Breakfast I have been wanting to make this forever! What better time to make it but on my Birthday!!! This recipe actually turned out better than I expected. I did skip a step, I was pressed for time but it turned out fine. I did not put it in the oven as directed.            My Birthday decorations went up on the 25th and are still up lol! What do I want every year for my Birthday? Lamb! I caught this one sale at Aldi a little while ago and froze it.  The marinade is very important!!!! Let it sit overnight! This time I decided to brown it before I put it in the oven. Smashed Potatoes! This was interesting! Voila!!!! Very good! actually I should have cooked it just a little less. The Lil Chef's Dinner she didn't want lamb. THIS WAS AMAZING!!!!! WAY TO GO DAIYA! I LOVE LOVE LOVE CHEE
