Mexican Brown Rice Bake – Gluten Free
Serving Size: 4
Ingredients
  • 2 cooked chicken breasts, shredded
  • 1 cup dry brown rice
  • 1 cup refried beans
  • 3/4 cup enchilada sauce
  • 1 cup shredded cheese (Go Veggie Shredded Cheese)
  • 1/2 green pepper, diced (Use red, yellow, or orange peppers if you have an inflammatory disorder. Arthritis, Fibro, Lupus, RA , etc.)
  • 2 tsp chili flakes, optional
Instructions
  1. Cook brown rice --> I like this method < this was included by the original author. I really like the Success Brown Rice in the bag
  2. Heat oven to 350 and grease a 9x9 baking dish
  3. In a mixing bowl, stir together the shredded chicken and enchilada sauce. Mix in the rice and beans and stir until it's all combined
  4. Transfer the mixture to the prepared 9x9 dish and top with the green peppers, then the shredded cheese and chili flakes
  5. Bake for 25-30 minutes, then broil for 2-3 to get a bit of crispiness to the layer of cheese

This is nice and uncomplicated! You know the only thing I'd change is the salt and make it kosher, other than that this recipe is clean. I haven't made it yet but I will the next time I need taco sauce! Homemade things are better!

I found this on Pinterest. Several things I do miss about being allergy free. So happy they can be duplicated at home Make sure the minced onions are JUST onions. I personally would use kosher salt. Use raw sugar. Instead of sour cream use 0% greek yogurt.
