Potato Soup Success - 11/13/15

I did it despite the bad day that I had and all the misc. mishaps. I actually followed the directions for once lol.
I did add corn to this which kinda makes it like corn chowder. This was my first time making potato soup ever so i'm impressed I also used red potatoes because I was trying to get rid of them lol.

Bob's red mill one to one GF flour

GF YF chicken stock and fat free 0% lactose free milk (hoping I won't have a reaction to the milk)

i did 1 1/2 onions, i had a half of onion i needed to get rid of. i added frozen corn and used cabot cheese

waiting for the soup to simmer. The directions said it would take aprox. 20 mins, it took a little longer. i suggest you kind of bring it to a slight boil then turn it down on simmer.

in the last 5 mins i seasoned it and added the chobani 0% greek yogurt and cabot. i didn't feel like shredding the cheese so i cut it up into small pieces.

my greek yogurt melted and now it's time to eat!!!

This is nice and uncomplicated! You know the only thing I'd change is the salt and make it kosher, other than that this recipe is clean. I haven't made it yet but I will the next time I need taco sauce! Homemade things are better!

I found this on Pinterest. Several things I do miss about being allergy free. So happy they can be duplicated at home Make sure the minced onions are JUST onions. I personally would use kosher salt. Use raw sugar. Instead of sour cream use 0% greek yogurt.
