Yogurt Cake

I absolutely, positively...loooove pound cake! I do not eat a lot of sweets at all but if someone made or gave me a GF pound cake I'd eat it! lol I think I'm willing to try this recipe, will you?

"A pound cake made with yogurt instead of sour cream.

Ingredients
  • 1 cup margarine, softened (smart balance)
  • 2 cups white sugar (raw sugar)
  • 3 eggs
  • 1 teaspoon lemon extract

  • 2 1/4 cups all-purpose flour (GF flour mix, I prefer Bob's Red Mill 1 to 1 GF flour)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 (8 ounce) container lemon flavored yogurt (see if you can find this with 0% milkfat)

Directions

  1. Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch bundt pan. Sift together the flour, baking soda and salt. Set aside.
  2. In a large bowl, cream together the margarine and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the lemon extract. Alternately beat in the flour mixture and the yogurt, mixing just until incorporated.
  3. Pour batter into a 10 inch Bundt pan. Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool 10 minutes in the pan, then turn out onto a wire rack and cool completely.

This is nice and uncomplicated! You know the only thing I'd change is the salt and make it kosher, other than that this recipe is clean. I haven't made it yet but I will the next time I need taco sauce! Homemade things are better!

Homemade Seasonings

I found this on Pinterest. Several things I do miss about being allergy free. So happy they can be duplicated at home Make sure the minced onions are JUST onions. I personally would use kosher salt. Use raw sugar. Instead of sour cream use 0% greek yogurt.
