This is what my mom had waiting on me yesterday after work. It was a veggie burger (made of mushrooms, broccoli, black beans, GF bread crumbs, parmesan, garlic, & mom added anchovy paste and fish sauce on her own. i'll post the recipe later) and eggplant, mushrooms, onions, carrots, tomatoes, garlic, and Serrano peppers w/brown rice. She made an aioli from scratch. I put the veggie burger in a gluten free wrap with tomatoes, red onions, & aioli (and then I took seconds home!) Lol
Sometimes you just need something vegan and GF
