Buttery, sweet and tender. These sugar cookies hit the mark for a terrific gluten-free option.

Ingredients

Cookies

cup granulated sugar (raw sugar)
1/2
cup shortening (I personally would use more "butter", shortening isn't an option for me but there are non soy shortenings that exist. I have only seen these types of alternatives at Whole Foods and other store similar)

cup butter, softened (Smart Balance)
2
teaspoons gluten-free vanilla

egg
2 1/2
cups Betty Crocker™ All-Purpose Gluten Free Rice Flour Blend (use your favorite GF All-Purpose flour mix, I prefer Bob's Red Mill)

teaspoon gluten-free baking powder
1/4
teaspoon salt (kosher salt)

Glaze

1
cup powdered sugar
2
tablespoons milk (lactose free or non dairy)

Directions

  • 1 In large bowl, beat granulated sugar, shortening and softened butter with electric mixer on medium speed, scraping bowl often, until creamy. On low speed, beat in vanilla and egg. Stir in flour blend, baking powder and salt until well mixed. Divide dough in half; shape each half into disk. Wrap in plastic wrap; refrigerate about 1 hour or until firm.
  • 2 Heat oven to 375°F. On work surface lightly sprinkled with flour blend, roll each half of dough to 1/4-inch thickness. Cut with 2 1/2-inch cookie cutter. Place 1 inch apart on ungreased cookie sheets.
  • 3 Bake 8 to 12 minutes or until edges are lightly browned. Let stand 2 minutes on cookie sheet; remove to cooling rack. Cool completely, about 15 minutes. Stir together Glaze ingredients. Spread on cookies. Sprinkle with additional granulated sugar, if desired.

This is nice and uncomplicated! You know the only thing I'd change is the salt and make it kosher, other than that this recipe is clean. I haven't made it yet but I will the next time I need taco sauce! Homemade things are better!

I found this on Pinterest. Several things I do miss about being allergy free. So happy they can be duplicated at home Make sure the minced onions are JUST onions. I personally would use kosher salt. Use raw sugar. Instead of sour cream use 0% greek yogurt.
