My Salad Kick

Ok so when I get on a kick , I kinda stay on it for awhile. "I made what my mom calls poached ‪#‎chicken‬. I had a craving for chicken ‪#‎salad‬ so this is what I did... I made a ‪#‎spicy‬ ‪#‎guacamole‬ mayo with raw yellow ‪#‎onions‬ in it. I put corn, banana peppers, tomatoes, LF cheese, corn chips, the guac and my usual tomato bacon salad dressing on it and wow it was good." That was a post from 12/11/15 from https://www.facebook.com/CookingWithMommy/.  Yesterday I made a Spicy BBQ Chicken Salad and it was pretty much the same thing except with Sweet Baby Ray's BBQ Sauce on it.

Spicy guac and Tomato Bacon dressing added

Yesterday to use up the last up of the Spicy guac mayo, I cooked the chicken and coated it with the mayo then added the chicken to the salad.

The Lil Chef decided to add a pretzel to my salad to make it "Gourmet"...

These salads are so big and filling all you need is one for like the day...ok half the day! I ate this at 2pm and I don't need dinner.

Homemade Seasonings

I found this on Pinterest. Several things I do miss about being allergy free. So happy they can be duplicated at home Make sure the minced onions are JUST onions. I personally would use kosher salt. Use raw sugar. Instead of sour cream use 0% greek yogurt.
